Today, cinema sound designers still have to mix individual sound effects into multiple channels in order to create soundtracks. If a scene is required (for example, a helicopter takes off), the sound must be assigned to a channel and mixed with other sounds.

Although the helicopter can shuttle in different channels, it cannot fly over you. You can't hear helicopters whizzing by like in reality.
